Easy, Make-Ahead, Baked Oatmeal

Now that everyone's coming and going at different times in the morning, I've found this easy baked oatmeal dish to be so convenient. It's delicious too, and there's nothing like a nice, warm breakfast to "stick to the ribs" for the day.

Easy Baked Oatmeal

3 cups quick cooking gluten free oats (Bob's Red Mill makes this)
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs
1 cup milk
1/2 cup butter, melted (margarine is fine instead)
additional milk

Combine dry ingredients in a large bowl. In a smaller bowl whisk together the eggs, milk, and melted butter. Stir this into the dry ingredients. I usually also stir in an apple, chopped but not peeled.

Spoon into a greased 11 x 7 or 9 x 9 baking dish, and bake uncovered at 350 for 40 minutes (for the 11 x 7) or 45 minutes (for the 9 x 9) Makes 9 servings.

Serve warm, with additional milk. This keeps well in the fridge for a few days, where anyone can cut themselves a square, warm it in the microwave, and enjoy a hot breakfast on the fly.
